When we arrive at the Marriott Cafe, we immediately spy a glistening podium full of fish, and right on cue, a loud rumbling of the stomach follows. We ask Chef Meik Brammer about the offerings., and he explains that he goes to the Navotas fish market at the crack dawn to ensure that he gets the day's freshest catch. Indeed, the fish have no smell, their eyes are clear and glistening, and their gills are pristine.
